Spicy Oatmeal Pancakes (THALIPUT)

Description:

Thaliput is a healty indian breakfast favorite. It resembles the North American standard breakfast pancakes only it is spicy and packed with vegetables and served with Coconut Chutney instead of syrup. So no sugar! If you don’t like spicy you can omit the chili. This a very satisfying breakfast/ brunch food that is best served hot off the griddle.

Ingredients:

  • 1 cup of oatmeal/ ground to fine flour
  • 2 tablespoons all purpose flour
  • 1/2 teaspoons salt
  • 1/2 teaspoons cumin seed
  • 4 oz nonfat plain yogurt
  • 2/3 cups of water + 1/4 cup
  • 1/4 C onion fine chopped fine (I like white onion)
  • 1 Serrano chili chopped fine
  • 1/4 C coriander chopped fine
  • 1/2 C frozen carrots and peas thawed

Instructions:

Combine first 5 ingredients. Mix in 2/3 cup water. Add up to 1/4 cup water more in 1 Tbsp increments until the batter is the consistency of pancake batter. Fold in onions, corriander and carrots and peas.

Cook theses just like you would pancakes. Heat griddle pan on stove top to medium high. Use coconut oil, olive oil or butter on the pan to prevent sticking. Spoon 3 Tbsp of oatmeal mixture on to heated griddle. Cook until you see bubbles form on the top of the batter usually about 3-4 min and then flip to cook the other side which usually takes about 2 minutes.
