Easy Peasy Crockpot Chicken Curry

Easy Peasy Crockpot Chicken Curry is an all time favorite. Pre-cut and get ingredients ready the night before. Assemble in 10 min in the morning. Leave for work and return to a savory healthy meal ready to eat. You will make this time and time again. Experiment with different curry powder combinations to see which powder suits your palate.   • 2 Tbs Olive Oil
  • 2 medium onions chopped
  • 2 chili sliced in 4 pieces and de-seeded (optional)
  • 4 clove garlic sliced thin
  • 1 inch ginger sliced thin
  • 1/2 tsp cumin seed
  • 4 Tbs Instant Sambar Powder or curry powder
  • 2 Tbs Garham Masala Powder
  • 1 tsp salt
  • 14 oz can crushed tomatoes
  • 14 oz can diced tomatoes
  • 3 oz coconut milk
  • 1 1/2 lb chicken breast or chicken thighs whole
  • 4 Tbsp cilantro chopped

Sauté onions, chili, garlic, ginger, in olive oil over medium heat until onions are slightly translucent. Add sambar and garam masala powder, salt and stir. Add tomatoes and stir. Transfer to crockpot and add chicken and coconut milk. Cook 6-8 hours on low. Break up chicken and stir in 2 Tbsp cilantro. Save remaining cilantro for garnish.

Serve over hot rice and with a dolop of sour cream or nonfat plain yogurt.
