Back in the day… you couldn’t force me to eat broccoli! That steamed chewy vegetable that I just could not stand. Then several years ago, I saw the light. My friend Kati introduced me to roasted broccoli and I fell in love. This recipe is fun, simple and the perfect addition to any meat. Enjoy!
2 – 3 bunches of broccoli (about 2 pounds), cut into florets
3 tablespoons of Trader Joe’s Everything but The Bagel Sesame Seasoning Blend (I saw recently a similar seasoning at Kroger so you might be able to find it there)
Juice of Two Lemons
2 tablespoons of minced garlic
3-4 tablespoons extra virgin olive oil
1 tablespoon of paprika
Dash of salt and pepper
Pre-heat oven to 425 degrees. In a large bowl combine oil, lemon juice, Trader Joes Seasoning Blend, garlic, and paprika. Mix well with a fork or whisk. Now add broccoli florets and use your hands or large spoon to make sure the florets are evenly coated. Next take a 10 x 14 baking pan and line with parchment paper or aluminum foil. Place coated florets in an even layer across the pan. Bake for 15 to 20 minutes until the florets turn deeply golden on the edges
