Cacio e Pepe (Cheese & Pepper Linguine)

Ingredients

  • 3 Tbs Organic Salted Butter
  • 1Tsp Fresh Cracked Pepper
  • 1.5 Cups Fresh Grated Romano Cheese
  • 1 Cup Starchy Water From Boiling Pasta (Divided)
  • 8 oz. Linguine Cooked As Directed
  • Extra Cracked Pepper And Fresh Romano For Garnish

Directions

Cook Linguine pasta as directed on the package – al dente. Drain saving one cup of the water that the pasta was boiled in.

In a sauce pan heat butter until it melts and add cracked pepper stirring once. Add 1/2 cup of the hot pasta water to the butter and stir on med high heat until it becomes slightly thickened. Remove the sauce from the heat and allow to cool 2 minutes. Add cheese stirring until melted creamy.

Add drained Linguine to the butter cheese sauce and combine. Serve hot garnished with fresh Romano cheese and fresh cracked pepper.
